Slow Cooker Thai Curried Pork

Ingredients
  • 1 large sweet onion, chopped
  • 4 cloves of garlic, minced or pressed
  • 1 tbsp. fresh ginger, grated
  • 8 ounces baby carrots (whole carrots, peeled and chopped is fine too)
  • 4 lean boneless pork chops
  • 1 tbsp. turmeric
  • 1 tbsp. hot curry (less if you don't like spicy or just use regular curry)
  • 2 tsp. cumin
  • 2 tsp. cardamom
  • 1 tsp. crushed red pepper flake (optional)
  • Sea salt and fresh cracked pepper to taste.
  • ½ cup reduced-sodium chicken broth
Instructions
  1. Spray slow cooker liner with misted extra virgin olive oil or place a slow cooker liner in the base of the slow cooker.
  2. Add onions, garlic, ginger and carrots to the bottom of the pot.
  3. Add pork chops, spices and chicken broth.
  4. Stir, cover and cook for 4 hours on high or 8 hours on low.
  5. Shred pork and stir. Check and adjust seasoning.
  6. Serve over brown rice or quinoa and add a steamed green vegetable.
