Slow Cooker Orange Sesame Chicken

- 1 large sweet yellow onion, sliced
- 3 cloves fresh garlic, minced or pressed
- 1 lb. boneless, skinless chicken breasts
- 1 cup fresh orange juice (about 2 oranges)
- 1 tsp. orange zest
- ½ cup reduced-sodium chicken stock
- 3 tbsp. honey
- 2 tbsp. light soy sauce
- 1 tsp. toasted sesame seeds
- 1 tsp. fresh cracked pepper
- Either spray the bowl of your slow cooker with non-stick cooking spray or place a slow cooker liner inside.
- Add onion, garlic and chicken to the slow cooker.
- In a small bowl, mix the orange juice, zest, chicken stock, honey and soy sauce. Pour over chicken.
- Add sesame seeds and pepper.
- Cover and cook on low for 7-8 hours.
- Shred or break up chicken (this should happen very easily) and mix with sauce.
- Serve over brown rice or quinoa with a green vegetable or salad.
