Slow Cooker Orange Sesame Chicken

Ingredients
  • 1 large sweet yellow onion, sliced
  • 3 cloves fresh garlic, minced or pressed
  • 1 lb. boneless, skinless chicken breasts
  • 1 cup fresh orange juice (about 2 oranges)
  • 1 tsp. orange zest
  • ½ cup reduced-sodium chicken stock
  • 3 tbsp. honey
  • 2 tbsp. light soy sauce
  • 1 tsp. toasted sesame seeds
  • 1 tsp. fresh cracked pepper
Instructions
  1. Either spray the bowl of your slow cooker with non-stick cooking spray or place a slow cooker liner inside.
  2. Add onion, garlic and chicken to the slow cooker.
  3. In a small bowl, mix the orange juice, zest, chicken stock, honey and soy sauce. Pour over chicken.
  4. Add sesame seeds and pepper.
  5. Cover and cook on low for 7-8 hours.
  6. Shred or break up chicken (this should happen very easily) and mix with sauce.
  7. Serve over brown rice or quinoa with a green vegetable or salad.
