Slow Cooker Salsa Chicken and Rice

Ingredients
FOR THE SALSA CHICKEN
  • 1 large sweet yellow onion, chopped
  • 3-4 garlic cloves, minced or pressed
  • 1 lb. boneless, skinless chicken breasts
  • 1 cup homemade salsa or other salsa of your choice
  • 1 tbsp. cumin
  • 1 tbsp. chili powder
  • 1 tsp. chipotle chili powder (or more depending on how spicy you like it)
  • 1 tsp. cracked red pepper (or more depending on how spicy you like it)
  • Sea salt and fresh cracked pepper to taste.
  • ¼ cup reduced-sodium chicken stock
FOR THE RICE
  • 1 cup long grain brown rice
  • 2 cups water
Instructions
FOR THE SALSA CHICKEN
  1. Place a slow cooker liner in the bowl of the slow cooker or spray with non-stick cooking spray.
  2. Add onions, garlic, chicken, salsa, cumin, chipotle chili powder, cracked red pepper, salt and pepper.
  3. Add stock over top over the mixture and stir to combine.
  4. Cover and cook on low for 8 hours or high for 4 hours.
FOR THE RICE
  1. Add rice and water to your programmable rice cooker. Set timer for 7 hours if cooking the chicken on low or 3 hours if cooking the chicken on high. This will have the rice and chicken ready at about the same time.
  2. Fluff with a fork.
  3. Serve chicken over rice.
