Slow Cooker Tomato Sauce with Fresh Herbs

Ingredients
  • 1 large, sweet yellow onion, sliced
  • 4 cloves fresh garlic, pressed or minced
  • 3-4 lbs. fresh tomatoes, halved and cored
  • 1 tbsp. rosemary, chopped
  • 1 tbsp. oregano, chopped
  • 1 tbsp. basil, chopped
  • sea salt & fresh cracked pepper flakes to taste.
  • If you want it spicy, add cracked red pepper to taste.
Instructions
  1. Place a slow cooker liner in the bowl of your slow cooker or spray with non-stick cooking spray.
  2. Add onion and garlic to the bottom of your slow cooker.
  3. Top with tomatoes, rosemary, oregano, basil, salt, pepper (and red pepper flakes if you are using).
  4. Cover and cook on high for 3-4 hours or until the tomatoes are broken down.
  5. Use an immersion blender to blend your sauce.
  6. Use immediately, freeze or can for later.
