Cook brown rice according to package instructions, set aside and keep warm.
Place a large skillet over medium-high heat.
Add olive oil, onion and garlic and saute until the onion has soften and turned translucent, approximately 3-4 minutes.
Add chicken to the skillet and brown chicken on all sides, approximately 3-4 minutes.
Add mustard, broth, broccoli, salt and pepper. Cover. Reduce heat to a simmer and cook for approximately 10 minutes or until broccoli is crisp-tender and bright green. Turn off heat.
Sprinkle with cheese and let stand for a few minutes to let cheese melt.
Serve over cooked brown rice.
