Weeknight Chicken Divan with Rice

Ingredients
  • I cup quick cooking brown rice
  • 2 tbsp. extra virgin olive oil
  • 1 large sweet yellow onion, chopped
  • 3-4 cloves fresh garlic, minced or pressed
  • 1 lb. boneless,skinless chicken breasts, chopped into bite-sized pieces
  • 2 tbsp. dijon stone ground mustard
  • ¼ cup reduced-sodium chicken broth
  • 3 cups broccoli florets
  • Sea salt and fresh ground pepper, to taste.
  • ½ cup shredded cheddar cheese
Instructions
  1. Cook brown rice according to package instructions, set aside and keep warm.
  2. Place a large skillet over medium-high heat.
  3. Add olive oil, onion and garlic and saute until the onion has soften and turned translucent, approximately 3-4 minutes.
  4. Add chicken to the skillet and brown chicken on all sides, approximately 3-4 minutes.
  5. Add mustard, broth, broccoli, salt and pepper. Cover. Reduce heat to a simmer and cook for approximately 10 minutes or until broccoli is crisp-tender and bright green. Turn off heat.
  6. Sprinkle with cheese and let stand for a few minutes to let cheese melt.
  7. Serve over cooked brown rice.
