Make it a Viva Italia Night with Bruschetta Chicken Pasta!

Ingredients
  • 1 box (13.25 oz.) whole grain or whole wheat pasta, cooked al-dente according to package instructions.
  • 1 sweet, yellow onion, finely chopped
  • 3-4 cloves, garlic, chopped or pressed
  • 2 lbs. boneless, skinless chicken breasts, chopped into bite-sized pieces.
  • 2 cans (14.5 oz) Hunt's Fire Roasted Tomatoes
  • ¼ cup Hunt's tomato sauce
  • 1 tbsp. balsamic vinegar
  • ¼ cup fresh basil, chopped
  • ½ cup Progresso Tuscan Chicken Broth
  • 1 tbsp.corn starch
  • ⅓ cup Kraft Parmesan Cheese
  • Crushed red pepper (optional), sea salt and fresh ground pepper, to taste.
Instructions
  1. Cook pasta "al-dente" according to package instructions, reserving ½ cup of the starching cooking water. Drain pasta and keep warm.
  2. Heat olive oil in a large skillet over medium-high heat, add onions and garlic. Saute until onion are soft and translucent, approximately 3-4 minutes.
  3. Add chicken pieces. Brown chicken on all sides, approximately 4-5 minutes.
  4. Add tomatoes, tomato sauce, balsamic vinegar and fresh basil to the pan. Stir to combine.
  5. In a separate small bowl combine reserved starchy cooking water, chicken broth and corn starch.
  6. Add to chicken mixture. Stir to combine and let the sauce thicken. Approximately 3-4 minutes.
  7. Combine sauce, pasta, parmesan cheese, crushed red pepper (if using), salt and pepper.
  8. Serve with a simple green salad and crusty whole-wheat bread.
