Summer Healthy Grain Salad

Ingredients
  • 1 box Suddenly Grain Salad Southwest Grains
  • 1 green bell pepper, seeded and chopped
  • 1 Jalapeno, seeded and chopped
  • ¼ large red onion, finely chopped
  • ½ large beef-steak tomato, seeded and chopped
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. cold water
  • Sea salt and fresh ground pepper to taste.
Instructions
  1. Fill 3 quart (or larger) saucepan ½ full with water and heal to boiling. Carefully place UNOPENED bag of Grains in the water.
  2. Boiling for 17 minutes, turning the bag just once, Cooked grains will fill bag.
  3. While grains are cooking, prep and chop all veggies.
  4. Stir together the dressing mix, oil and water in a medium bowl. Add veggies and stir to combine.
  5. Add grain/pasta mixture and stir well to combine.
  6. Add salt and pepper to taste.
  7. Serve food room temp or chilled.
