Soften cream chease by bringing to room temperature or using the microwave on a low setting.
In a mixing bowl, add softened cream chease, greek yogurt and honey. Beat with an electric mixer on low slowly to combine adding the almond milk gradually to achieve the desired texture. The filing should be thick and smooth.
Place graham crackers in a food processor and gently pulse to crumble, careful not to turn them to dust.
Divide graham cracker crumbs evenly among five dessert dishes, stemless wineglasses or mason jar.
Carefully spoon 2 tbsp. of the cream cheese filling to each dish or glass. Top with 2 tbsp. of fresh blueberries per dish.
Divide the remaining cheesecake filling among the serving dishes, top with a few more blueberries and enjoy!!
