Smoky Spice Blend Roasted Chickpeas

Ingredients
  • 2 cans (16 oz. each) chickpeas; rinsed, drained and patted dry
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. cumin
  • 1 tbsp. chili powder
  • 1 tsp. chipolte chili powder
  • 1 tsp. sea salt
Instructions
  1. Pre-heat oven to 400°F.
  2. In a medium bowl, combine chickpeas, olive oil and spices. Stir to combine.
  3. Spread chickpeas in a single layer on a foil-lined baking sheet.
  4. Place in the oven and set the timer for 35 minutes.
  5. Halfway through the roasting time, take them out of the oven and give a quck stir. Replace in the oven and continue roasting.
  6. When the timer goes off, turn off the oven but do not remove the chickpeas.
  7. Let them sit in the oven as it cools off, atleast 1 hour.
  8. Enjoy immediately or place in an airtight container.
