How To Make Cauliflower Rice or Couscous

Ingredients
  • 1 head cauliflower
FOR COOKED CAULIFLOWER RICE OR COUSCOUS
  • 1 tbsp. extra virgin olive oil
  • 1 tsp. sea salt
Instructions
  1. Remove the green leaves from the cauliflower and discard.
  2. Cut the cauliflower into half and then into fourths
  3. Cut out the tough cores from each fourth
  4. Break each fourth into florets
  5. Add ½ of the florets into a food processor
  6. Process in 1 minute pulses until a rice-like consistency is reached
  7. Remove any larger pieces that haven't processed and set aside
  8. Add the processed cauliflower to a medium mixing bowl
  9. Add remaining cauliflower florets and large pieces from previous batch to the food processor and repeat pulsing.
  10. Add to the mixing bowl and fluff with a fork.
  11. Enjoy if eating raw!
FOR COOKED CAULIFLOWER RICE OR COUSCOUS
  1. Add olive oil to a large skillet over medium heat
  2. Add cauliflowere rice or couscous to the skillet and add salt
  3. Cover and cook for 5-8 minutes or until it is as soft as desired
  4. Enjoy immediately or refrigerate in an air-tight container until ready to eat!
