Guacamole Quinoa Chicken Wraps

Ingredients
  • ½ cup quinoa
  • 1 cup water
  • 2 ripe avocados, flesh scooped out and mashed slightly
  • 1 large tomato, chopped
  • ½ red onion, chopped
  • Juice of one lime
  • 2 cups fresh sweet peas
  • 2 cups cooked chicken, shredded or diced
  • sea salt and fresh ground pepper to taste.
  • whole grain wraps
Instructions
  1. Cook quinoa according to package instruction and set aside to cool.
  2. Combine the avocados, tomato, red onion and the juice from one lime in a large mixing bowl.
  3. Add fresh peas and stir to combine
  4. Add cooked chicken and quinoa to the guacamole and stir to combine
  5. Scoop as much chicken guacamole quinoa mixture as desired to a wrap. Fold the top and bottom of wrap and roll up burrito-style.
  6. Cut in half if desired. Enjoy!!
