1 tbsp. fresh thyme, chopped (save a sprinkle for garnish)
sea salt and fresh ground pepper to taste
⅓ cup dry white wine
1 cup instant brown rice
Instructions
Preheat the oven to 450°F.
Line a large baking dish with aluminum foil.
Place snapper filets in the dish and pour olive oil over top.
Add the mushrooms, thyme, salt and pepper.
Pour the white wine over the fish.
Cover dish in aluminum foil and bake covered for 10-15 minutes (or more depending on the thickness of your filets), until the fish is white and flaky.
While the fish is cooking, prepare the brown rice according to package instructions.
Remove the foil covering and place the dish back in the oven and turn on the broiler to brown the mushrooms. (This happens very quickly (1 minute or so) so watch carefully.
Remove from oven and serve immediately over prepared brown rice with a garnish of thyme.
