Olive and Pistachio Pesto

Ingredients
  • 2 cloves fresh garlic
  • 1 jar (10 oz.) Mezzetta Garlic Stuffed Olives
  • 1 jar (10 oz.) Mezzetta Sliced Greek Kalamata Olives
  • 5 oz. shelled roasted pistachios
  • Zest and juice of one lemon
Instructions
  1. Place garlic in the food processor, alone, and pulse until finely chopped. Scrap down the sides of the food processor bowl.
  2. Add olives, pistachios, lemon zest and lemon juice.
  3. Pulse in short, quick bursts until everything is chopped and combined.
  4. Chill for an hour and then serve with Pita Chips and Mezzetta Blue Cheese Stuffed Olives.
  5. Enjoy!!
