Hubby's Spicy Jambalaya Recipe

Ingredients
  • 1 tbsp. extra virgin olive oil
  • 2-3 assorted (red, yellow, green or orange) bell peppers, finely chopped
  • 5 stalks celery, finely chopped
  • 1 white onion, finely chopped
  • 2 jalapeño, finely chopped, ribs and seeds removed
  • 2-3 cloves fresh garlic, minced or pressed
  • 2 boneless, skinless chicken breasts, chopped into bite-size pieces
  • 16 oz. smoked sausage, sliced into rounds (we used jalapeño because we like it hot)
  • 3 cups chicken broth
  • 1 can (14.5 oz.) of diced tomatoes (we used fire roasted)
  • 3 tbsp. cajun seasoning
  • 2 cups uncooked white or brown rice
  • 1 lb. large shrimp, cleaned and deveined
  • ¼ cup cilantro, chopped
  • Sea salt and fresh ground pepper, to taste.
Instructions
  1. Heat olive oil in in a large skillet over medium-high heat.
  2. Once hot, add bell peppers, celery, onion, jalapeño and garlic to pan. Sauté for 5 minutes or until the vegetables have softened.
  3. Add chicken and sausage to the pan and continue to sauté for 5 more minutes or until chicken is browned on all sides.
  4. Add chicken stock, tomatoes, cajun seasoning and rice. Stir to combine. Cover and cook on medium-low for 25-30 minutes or until rice is tender, stirring often.
  5. Once rice is tender, add shrimp, cilantro, salt and pepper. Stir to combine and continue to cook until shrimp is pink and cooked through.
