Cilantro Edamame Hummus {no oil or tahini}

Ingredients
  • 1 (12 oz.) bag frozen shelled edamame (green soybeans)
  • 3 cloves garlic
  • 1 bunch cilantro
  • Zest and juice of one lemon
  • ½ cup water (more or less as needed)
  • 1 tsp. cumin
  • 1 tsp. chipotle chili powder, more or less depending on taste.
  • Sea salt and fresh ground pepper, to taste.
Instructions
  1. Cook edamame according to package instructions. Drain and let cool.
  2. Place garlic cloves in the food processor and process until very finely chopped. Scrape down the bowl.
  3. Add cilantro to the food processor and process until chopped. Scrape down the bowl.
  4. Add zest and juice of one lemon.
  5. Turn on food processor and slow pour water in, small amounts at a time, until you achieve a good consistency.
  6. Scoop hummus out and into an air tight container and chill for at least an hour before serving.
