Cilantro Edamame Hummus {no oil or tahini}

Serves: 6
- 1 (12 oz.) bag frozen shelled edamame (green soybeans)
- 3 cloves garlic
- 1 bunch cilantro
- Zest and juice of one lemon
- ½ cup water (more or less as needed)
- 1 tsp. cumin
- 1 tsp. chipotle chili powder, more or less depending on taste.
- Sea salt and fresh ground pepper, to taste.
- Cook edamame according to package instructions. Drain and let cool.
- Place garlic cloves in the food processor and process until very finely chopped. Scrape down the bowl.
- Add cilantro to the food processor and process until chopped. Scrape down the bowl.
- Add zest and juice of one lemon.
- Turn on food processor and slow pour water in, small amounts at a time, until you achieve a good consistency.
- Scoop hummus out and into an air tight container and chill for at least an hour before serving.
