Gardein Crabless Cakes Lettuce Wraps with Creamy Avocado Sauce

Serves: 6
- 2 bags of Gardein Crabless Cakes
- 1 ripe avocado, pitted and flesh scooped out
- ½ greek yogurt (or vegan alternative)
- Zest and juice of one lime
- Sea salt and fresh ground pepper, to taste
- Water, as needed
- 1 head butter or bibb lettuce
- Cook the Gardein Crabless Cakes according to package instructions. (I used the skillet method)
- In a high speed blender or food processor, add avocado, lime zest and juice, greek yogurt, salt and pepper.
- Blend together, adding water 1 tbsp. at time, to get a creamy consistency. Set aside.
- Once the crabless cakes are cooked through and crispy, remove from pan.
- To serve, place a spoonful of the creamy avocado sauce in the center of a lettuce leaf, add 3 crabless cakes on top of the sauce and dollop each with a little more sauce and wrap up taco or burrito style.
