Gardein Crabless Cakes Lettuce Wraps with Creamy Avocado Sauce

Ingredients
  • 2 bags of Gardein Crabless Cakes
  • 1 ripe avocado, pitted and flesh scooped out
  • ½ greek yogurt (or vegan alternative)
  • Zest and juice of one lime
  • Sea salt and fresh ground pepper, to taste
  • Water, as needed
  • 1 head butter or bibb lettuce
Instructions
  1. Cook the Gardein Crabless Cakes according to package instructions. (I used the skillet method)
  2. In a high speed blender or food processor, add avocado, lime zest and juice, greek yogurt, salt and pepper.
  3. Blend together, adding water 1 tbsp. at time, to get a creamy consistency. Set aside.
  4. Once the crabless cakes are cooked through and crispy, remove from pan.
  5. To serve, place a spoonful of the creamy avocado sauce in the center of a lettuce leaf, add 3 crabless cakes on top of the sauce and dollop each with a little more sauce and wrap up taco or burrito style.
