Line a large baking sheet with aluminum foil or parchment paper and set aside.
Remove pizza dough from the refrigerator and set aside to come to room temperature.
Heat olive oil in a large skillet over medium-high heat.
Once hot, add chicken pieces and saute 4-5 minutes to brown on all sides.
Remove chicken from pan and set aside, keeping warm, and turn heat down to medium.
Add butter to skillet and then add onions and garlic.
Saute onions and garlic until soft and starting to brown (approximately 15-20 minutes), stirring frequently. If they start to get dry or too brown add a splash or two of water.
Once browned, add spinach and cooked chicken to the pan, stir to combine and heat through.
Season with salt and pepper and then turn off heat.
In a small mixing bowl add goat cheese and a splash or two of milk to make it spreadable. Whisk until smooth and easily spreadable.
Stretch or roll out pizza dough to fit the baking sheet that you are using.
Spoon goat cheese mixture on the pizza dough and spread to evenly coat the pizza dough leaving about a 1 inch border on the edges of the dough.
Add onion, spinach, chicken mixture on top of goat cheese. Spread out evenly.
Top with shredded cheese.
Bake 18-25 minutes (depending on thickness of the dough) or until crust is golden brown and cheese is thoroughly melted.
Broil for 1-2 additional minutes, if needed, to brown the top. **If you use the broiler, watch very closely as it will burn the pizza very quickly!!
Remove from oven and sprinkle with basil.
Let the pizza sit for about 5 minutes before cutting.
Cut into 8-12 pieces, depending on size preference.
