Coconut Double Chocolate Cookies

Ingredients
  • ½ cup pecan halves
  • Immaculate Baking Gluten-Free Double Chocolate Cookie Mix
  • 1 cup coconut flakes
  • 2 eggs
  • ⅓ cup natural applesauce
Instructions
  1. Preheat oven to 350 F.
  2. Chop pecans by placing in a food processor and pulsing a few times.
  3. In a large mixing bowl, combine Immaculate Baking Gluten-Free Double Chocolate Cookie Mix, coconut flake, eggs, and applesauce. Stir to form a soft dough.
  4. Drop dough by tablespoonfuls 2 inches apart onto ungreased cookie sheet.
  5. Bake 11 to 13 minutes or until edges are set.
  6. Cool 2 minutes before removing from cookie sheet.
  7. Cool completely; store in airtight container.
