Ingredients
For the Chipotle Lime Turkey Kabobs
  • 4 turkey tenderloins, chopped into bite size pieces
  • Zest and juice of 4 limes
  • 3-4 cloves of garlic, minced or pressed
  • 1 tbsp. chipotle in adobo sauce, minced
  • 2 tsp. honey
  • ¼ cup cilantro, chopped
  • 1 tbsp. cumin
  • 1 tsp. sea salt
  • 1 tsp. freshly ground pepper
  • 1 red bell pepper, ribs and seeds removed & chopped into bite size pieces
  • 1 yellow bell pepper, ribs and seeds removed & chopped into bite size pieces
  • 1 green bell pepper, ribs and seeds removed & chopped into bite size pieces
  • 4 jalapeno peppers, ribs and seeds removed & chopped into bite size pieces
  • 1 red onion, chopped into bite size pieces
For the Chipotle Cilantro Rice
  • 2 cups water
  • 2 cups instant brown rice
  • 1 tbsp. chipotle in adobo sauce, minced
  • ¼ cup cilantro, chopped
  • sea salt and fresh ground pepper
Instructions
For the Chipotle Lime Turkey Kabobs
  1. Make the marinade: In a large zip top bag combine zest and juice of limes, garlic, chipotle in adobo sauce, honey, cilantro, salt and pepper.
  2. Add turkey tenderloins to the bag and close it. Shake and massage the bag to fully distribute the marinade to the turkey.
  3. Place in the refrigerator for at least 30 minutes to marinate.
  4. Once the turkey has marinated, begin assembling the kabobs on metal skewers and light the grill. Preheat the grill to medium.
  5. Alternate between peppers, onions and turkey pieces to create kabobs.
  6. Grill kabobs over medium heat, flipping every 3-4 minutes for approximately 15 minutes or until turkey is cooked thoroughly and no pink remains (internal temperature should be 165 degrees).
  7. Remove from grill and serve over Chipotle Cilantro Rice.
For the Chipotle Cilantro Rice
  1. Combine water, rice and chipotle in adobo sauce in a medium sauce pan.
  2. Bring to a boil over high heat.
  3. Reduce heat to low, cover and simmer 10 minutes or until all water is absorbed.
  4. Stir in cilantro, salt and pepper and fluff with a fork.
