1 package (9-10 oz.) frozen chopped spinach, defrosted and drained.
1 cup finely chopped yellow bell pepper, seeds and ribs removed
1 cup finely chopped red bell pepper, seeds and ribs removed
1 cup matchstick carrots
1 cup shredded cheddar cheese
4 eggs
1 tsp. cumin
1 tsp. chili powder
sea salt and fresh ground pepper, to taste.
Instructions
Preheat oven to 350 F.
Spray two 24 count mini muffin tins with non stick cooking spray or use 2 silicone mini muffin pans. Set aside.
Cook the Village Harvest Organic Ancient Grain Blend according to package instructions and let cool slightly.
In a large mixing bowl combine cooked grains, spinach, bell peppers, carrots, cheddar cheese, eggs, cumin, chili powder, salt and pepper. Mix until thoroughly combined.
Spoon veggie grain mixture into the mini muffin pans.
Bake for 20-25 minutes or until golden brown.
Serve immediately or let cool if freezing.
Notes
To freeze, let the Mini Veggie Bites cool completely. Then place in freezer bags or vacuum seal. Freeze for up to 3 months. To reheat: place in the microwave for 30 seconds on high, in intervals until they are warmed through.
