Sweet n Spicy Thai Chili Chicken Pizza

Ingredients
  • 2 tbsp. brown sugar
  • 1 tbsp. cumin
  • ½ tsp. cayenne pepper (more or less or none depending on how spicy you like it)
  • ½ tsp. ground clove
  • ½ tsp. cinnamon
  • 1 tsp. salt
  • ½ tsp. freshly ground pepper
  • Cornmeal
  • 1 refrigerated pizza dough
  • 2 tbsp. extra virgin olive oil
  • 1.5 lbs. boneless skinless chicken breasts, chopped into bite-size pieces
  • 1 large sweet yellow onion chopped
  • 3-4 cloves garlic, minced or pressed
  • 1 red bell pepper, seeded and chopped
  • ½ cup sweet chili sauce
  • 1 cup shredded colby jack or cheddar cheese
Instructions
  1. Preheat oven to 425 degrees F.
  2. In a small bowl combine brown sugar, cumin, cayenne pepper (if using), clove, cinnamon, salt and pepper. Set aside.
  3. Spray a cooking sheet or pizza stone with nonstick spray and then sprinkle with cornmeal. Roll out pizza dough and stretch to size.
  4. Prebake pizza dough for 6-8 minutes or until just starting to get a little bit of color. Remove from oven and set aside.
  5. While pizza dough is pre baking, heat olive oil in a large skillet over medium high heat.
  6. Once hot, add chicken pieces and sauté for 3-4 minutes or until browned on all sides.
  7. Add onion, garlic and bell pepper. Cook veggies for 4-5 minutes or until softened.
  8. Turn off heat and stir in sweet chili sauce.
  9. Spoon chicken mixture onto prebaked pizza crust to within ½ inch of edges.
  10. Top with cheese.
  11. Place in oven and bake for 10-12 more minutes or until crust is a golden brown and cheese is melted.
  12. Remove from oven and let cool for 2 minutes.
  13. Cut into 12 slices and enjoy!
