Cheesy Ground Beef Rice Skillet

A super-simple, one-pot recipe that puts dinner on the table in 30 minutes or less! This meal is a family favorite, requested over and over and is perfect for crazy weeknights!

Ingredients
  • 1 lb. lean ground beef
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced or pressed
  • 1 (10¾ oz.) can reduced-sodium or healthy request condensed cream of broccoli soup
  • 1 (8 oz.) can no salt added tomato sauce
  • 1 tbsp. Worcestershire sauce
  • 2 cups uncooked instant brown rice
  • 2 cups reduced-sodium beef broth (water can be substituted)
  • 4 cups fresh broccoli florets (frozen broccoli can be substituted)
  • 1 tsp. crushed red pepper flake (more or less depending on taste)
  • Sea salt and freshly ground pepper, to taste (be very careful to not add too much salt)
  • ½ cup shredded sharp cheddar cheese
  • 2 tbsp. cilantro, chopped (parsley can be substituted)
Instructions
  1. Brown the ground beef in a large, deep skillet over medium-high heat.
  2. Cook until no pink is visible in the beef and drain if needed.
  3. Add onion and garlic and sauté until onion is translucent
  4. Add soup, tomato sauce, Worcestershire, rice, broth, broccoli, salt, pepper and crushed red pepper flake (if using). Stir to combine.
  5. Bring to a boil then reduce heat to a simmer.
  6. Cover and cook for 10-15 minutes or until rice is tender and most of the liquid is absorbed, stirring a few times.
  7. Turn off heat.
  8. Sprinkle cheese and cilantro on top; cover let cheese melt.
