Slow Cooker Creamy Cilantro Lime Chicken

Ingredients
  • 1 large, sweet, yellow onion; sliced
  • 3-4 cloves garlic, minced or pressed
  • 2 lbs. boneless, skinless chicken breasts
  • 1 (4 oz.) can fire-roasted diced green chilis
  • 1 tbsp. ground cumin
  • 1 tsp. oregano
  • 1 tsp. ground coriander
  • Sea salt and fresh ground pepper, to taste
  • Zest and juice of one lime
  • 1 cup reduced-sodium chicken broth
  • 1 small container (5 oz.) nonfat greek yogurt
  • 2 tbsp. cilantro (more or less depending on preference), chopped; plus more for garnish
Instructions
  1. Place a slow cooker liner in the bowl of a slow cooker or spray liberally with nonstick cooking spray.
  2. Add sliced onions and garlic to the bottom of the slow cooker bowl.
  3. Place chicken on top and season with spices.
  4. Add lime zest and juice and then pour chicken broth down over everything.
  5. Cover and cook on low for 7-8 hours or high for 3-4 hours.
  6. Once chicken is cooked through and tender, stir and break up chicken.
  7. Add greek yogurt and cilantro. Stir to combine.
  8. Serve over brown rice, quinoa or alone for a low carb meal.
  9. Garnish with chopped cilantro.
