One Pot Beef Taco Rice Skillet with Corn is an easy dinner recipe that the whole family will love! This weeknight winner is on the table in 30 minutes.

Ingredients
  • 1 lb. lean ground beef
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced or pressed
  • 2 cups instant brown rice
  • 1 can (10 oz.) enchilada sauce
  • 10 oz. water
  • 1 tbsp. chili powder
  • 1 tbsp. cumin
  • 1 tsp. chipotle chili powder
  • 1 tsp. red pepper
  • 1 tsp. coriander
  • 1 tsp. paprika
  • Sea salt and fresh ground pepper, to taste
  • 1 bag (10 oz.) frozen corn kernals
  • 1 cup Mexican blend shredded cheese
  • Fresh chopped cilantro, parsley or oregano for garnish (optional)
Instructions
  1. Heat a large skillet over medium-high.
  2. Add beef to the skillet, stir frequently and cook for 6-8 minutes or until brown
  3. Add onion and garlic to the skillet and cook for 2-3 minutes or until onion is beginning to soften.
  4. Add rice and enchilada sauce to the pan and stir.
  5. Fill empty enchilada sauce can back up with water and pour into skillet and stir.
  6. Add spices to the skillet and stir well to combine.
  7. Cover and cook for 10-15 minutes or until most of the liquid is absorbed and rice is tender.
  8. Stir in corn and cheese and cook for 3-4 minutes to melt cheese and heat corn through.
  9. Sprinkle with chopped cilantro, parsley or oregano (if using).
  10. Enjoy!
