Slow Cooker Italian Chicken
Total time
- 1 cup chopped onion
- 1 lb boneless, skinless chicken breast (frozen is fine)
- 1 tablespoon minced or pressed garlic
- 6 medium tomatoes, chopped (or 2-14.5 ounce cans diced tomatoes)
- 2 green bell peppers, seeded and chopped
- 2 tablespoon tomato paste
- ½ cup sodium-free or reduced-sodium chicken stock, divided
- 2 teaspoons italian seasoning
- 1 teaspoon sea salt
- 1 teaspoon fresh cracked black pepper
- Spray a slow cooker with non-stick cooking spray or insert a slow cooker liner.
- Add onion to the bottom of the slow cooker and place chicken on top of the onion.
- Add garlic, tomatoes, bell peppers, tomato paste, ½ cup chicken stock and seasonings to slow cooker.
- Cover and cook on low for 7-8 hours or high for 3-4.
- Serve over wild rice, brown rice, quinoa or enjoy alone for a low-carb meal.
