These quick and easy Cookie Dough Bites are a no-bake treat that’s high in fiber and loaded with flavor. They can be made in just five minutes. So easy and yummy for the kiddos to help and then enjoy as a snack. They’re a healthy choice when you’re craving something sweet.

Ingredients
  • 1 (15-oz.) can chickpeas (garbanzo beans), drained, rinsed
  • ¼ cup peanut butter powder (I used chocolate peanut butter powder)
  • 3 Tbsp. dry rolled oats
  • 2 Tbsp. unsweetened almond milk (+ splash more if too dry - I had to do this)
  • 2 tsp. pure vanilla extract
  • ¼ tsp. ground cinnamon
  • ¼ tsp. sea salt (or Himalayan salt)
  • 3 Tbsp. cacao nibs or mini chocolate chips
Instructions
  1. Add chickpeas, peanut butter powder, oats, almond milk, extract,
  2. sweetener, cinnamon, and salt to a food processor; blend until smooth,
  3. scraping down sides as needed.
  4. Transfer to a small mixing bowl. Add cacao nibs or mini chocolate chips; stir to combine.
  5. Roll into 12 balls, approx. 1½ inches each. Enjoy immediately, or store
  6. refrigerated in an airtight container for up to 4 days
