April is here, flowers are blooming and we are seeing green everywhere (even our cars are turning green from the pollen) and I have a 6 week old now! She is getting so big!! In honor of Earth Day on April 22, I decided to use the Wild Selections® Solid White Albacore Tuna in Water to create a Albacore Tuna Kale Salad with a Simple Lemon Dijon Vinaigrette.
The Wild Selections® Solid White Albacore Tuna is the star of this Albacore Tuna Kale Salad with its simple all-natural ingredients and delicious taste. The vegetables that I topped the salad with are some options that you could consider when preparing your salad. I think that they worked well together, but you could absolutely make substitutions based on what you have on hand or taste preference.

Here is your recipe for Albacore Tuna Kale Salad with a Simple Lemon Dijon Vinaigrette:
- 2 cloves of garlic, minced or pressed
- Zest and juice of one lemon
- 3 tbsp. dijon mustard
- ¼ cup apple cider vinegar
- ¾ cup extra virgin olive oil
- Sea salt and freshly ground pepper
- 3 cups kale, chopped or torn into small pieces
- 1 can (5 oz.) Wild Selections® Solid White Albacore Tuna in Water, drained
- ½ cup cherry tomatoes, chopped in half
- ½ cup matchstick carrots
- ½ cup seedless cucumber, chopped
- ½ cup mini bell peppers, sliced
- ½ avocado, pit and skin removed, sliced
- Add all ingredients in a mason jar.
- Seal tightly with the lid and shake for 30 seconds or so to combine.
- In a large bowl, add kale pieces and top with Wild Selections® Solid White Albacore Tuna in Water and all veggies.
- Drizzle with Simple Lemon Dijon Vinaigrette.
- Serve immediately and enjoy!
