The holidays are over but tis the season for Bowl Games, the inaugural College Football Championship, NFL Playoffs and then the Superbowl. Game day food will be needed for all of those parties and get-togethers!! I love nothing better than a game day spread where we put out several appetizers or party foods and everyone just munches as they want through out the day as we are watching the games. My Cowboy Caviar Salsa recently made its first appearance on one of our game day spreads (which happen just about every Saturday during college football season) on New Year’s Day. It served a dual purpose as we need some black eye peas to user in the money in 2015 😉
I loved the “freshness” of this Cowboy Caviar Salsa!
Red, green and yellow bell peppers, red onion, cilantro green onion, corn, black-eyed peas, black beans come together in a simple dressing of lime zest, lime juice, red wine vinegar, extra virgin olive oil, salt, pepper and crushed red pepper. Super easy and super tasty!!
I followed this recipe for Texas Caviar (Cowboy Caviar is just another name that I liked better for some reason) from The Comfort of Cooking.
Here is the recipe for Cowboy Caviar Salsa:
- 2 (15oz.) cans black-eyed peas (use fresh if you wish, they just need to be cooked first)
- 1 (15oz.) can black beans (use dried if you wish, they just need to be cooked first)
- 2 cups corn (fresh or frozen)
- ½ cup red onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 yellow bell pepper, seeded and chopped
- 1 green bell pepper, seeded and chopped
- 3 scallions, chopped finely
- ½ cup cilantro, chopped
- 1tbsp. extra virgin olive oil
- 1 tsp. crushed red pepper flake
- Zest and juice of two limes
- Sea salt, fresh ground pepper and crushed red pepper flake to taste.
- Add all ingredients in a large bowl and toss to combine. Refrigerate for at least 1 hour up to overnight. Adjust seasonings as needed.
- Serve with tortilla chips, pita chips, as a topping for burgers or as a side for grilled meat.
