Goat Cheese, Spinach and Caramelized Onion Chicken Pizza is a delicious, frugal family dinner recipe when pizza cravings hit! Super easy and packed with veggies, fiber & protein, moms can feel better about serving this pizza then calling the local pizza delivery service!
Do you have one food that you could eat for just about every meal for the rest of your life? For me, that would be pizza!! I don’t think that I would ever get tired of it! I might get tired of my ever expanding waistline from eating that much pizza, but not of the pizza itself 😉 The bread, the cheese…I am in heaven!! I always try to throw in lots of veggies for good measure…girl math! I add in the veggies to balance out the bread and the cheese and I don’t feel bad for gobbling up a second or third piece 😉 Works don’t you think? Who is with me??? I am totally happy with a veggie pizza, but as I have mentioned before, my boys just don’t think dinner is complete without the meat so I will usually throw in some chicken to make them happy 🙂

My latest pizza creation, Goat Cheese, Spinach and Caramelized Onion Chicken Pizza, was inspired by this Goat Cheese Caramelized Onion Pizza Recipe on Minimalist Baker. It was quite a hit with the creamy and tangy goat cheese that was complemented by the sweet caramelized onions! I threw in a ton of chopped spinach to really up the veggie and nutritional factor, but nobody even noticed with all the other yummy flavors and then I finished it off with fresh basil straight out of my garden.
As usual (because y’all know that I can’t bake), I took a little shortcut from my local grocery store and purchase pre-made and pre-rolled fresh pizza dough from the bakery. It is just such a time and sanity saver for me! I give major kudos to anyone that is willing and able to make there own homemade pizza dough and maybe some day I will get the courage to try it for myself. For now, though, I am perfectly fine with letting the bakery help me out 😉
Here is your recipe for Goat Cheese, Spinach and Caramelized Onion Chicken Pizza:
- 1 lb. store-bought, fresh pizza dough (found in bakery department, pre-rolled if possible)
- 1 tbsp. extra virgin olive oil
- 1 lb. boneless, skinless chicken breasts, chopped into bite-size pieces
- 1 tbsp. butter
- 1 large yellow onion, chopped
- 3-4 garlic cloves, minced or pressed
- 1 container (10 oz.) frozen chopped spinach, thawed, pressed and drained
- Sea salt and fresh ground pepper, to taste
- 1 small container (4 oz.) crumbled goat cheese
- Splash or two of lowfat milk
- ½ cup shredded mozzarella or italian blend cheese
- fresh basil, chopped for topping
- Preheat the oven to 400 F.
- Line a large baking sheet with aluminum foil or parchment paper and set aside.
- Remove pizza dough from the refrigerator and set aside to come to room temperature.
- Heat olive oil in a large skillet over medium-high heat.
- Once hot, add chicken pieces and saute 4-5 minutes to brown on all sides.
- Remove chicken from pan and set aside, keeping warm, and turn heat down to medium.
- Add butter to skillet and then add onions and garlic.
- Saute onions and garlic until soft and starting to brown (approximately 15-20 minutes), stirring frequently. If they start to get dry or too brown add a splash or two of water.
- Once browned, add spinach and cooked chicken to the pan, stir to combine and heat through.
- Season with salt and pepper and then turn off heat.
- In a small mixing bowl add goat cheese and a splash or two of milk to make it spreadable. Whisk until smooth and easily spreadable.
- Stretch or roll out pizza dough to fit the baking sheet that you are using.
- Spoon goat cheese mixture on the pizza dough and spread to evenly coat the pizza dough leaving about a 1 inch border on the edges of the dough.
- Add onion, spinach, chicken mixture on top of goat cheese. Spread out evenly.
- Top with shredded cheese.
- Bake 18-25 minutes (depending on thickness of the dough) or until crust is golden brown and cheese is thoroughly melted.
- Broil for 1-2 additional minutes, if needed, to brown the top. **If you use the broiler, watch very closely as it will burn the pizza very quickly!!
- Remove from oven and sprinkle with basil.
- Let the pizza sit for about 5 minutes before cutting.
- Cut into 8-12 pieces, depending on size preference.
