Where did the summer go? It seems like Memorial Day was just yesterday and now somehow school has started. I can’t believe it!! I know that we start back to school earlier than they do in most parts of the country, but it still seems too soon 🙁.
And, to top that off, our little man started kindergarten!! He is at the big school now (Pre-K was in a separate center) and looking so grown up!! He has lost that little boy look as well as a couple of teeth ;-). His two front teeth are super loose, so I am sure the tooth fairy will be paying him a visit very soon!!
So, I wanted to make something that was soft and easy to eat for those tender gums. He absolutely loves guacamole and I want to encourage that love of healthy food!! I whipped up a batch of my guacamole with fresh peas (he doesn’t even know that they are there), mixed in some quinoa and chicken and my Guacamole Quinoa Chicken Wraps were born!
But before we get to the recipe, I want to share an organizational secret with you!! BONUS!! Back to school is a crazy time of year, but you can make your life a whole lot easier by using Ziploc® brand bags and storage containers.

My Guacamole Quinoa Chicken Wraps are super easy, which is great for this back-to-school time of year! The night before I want to make these, I throw a couple of chicken breasts in the slow cooker with a little bit of chicken stock and cook them on low for about six hours. I have a programmable slow cooker, so I can just set it and let it cook while I am sleeping. The next day, cook your quinoa according to package instructions, shred your chicken (or dice if you prefer), whip up some guacamole with fresh peas and mix it all together. Then, take the filling and put it up in a whole grain wrap of your choice.
After making the wraps, I slice each one in half so they fit perfectly in my Ziploc® brand Sandwich bags with Easy Open Tabs. I pack up a wrap for myself, Chris and our little man so we each can take one to work/school.
I wouldn’t suggest making more than one days’ worth at a time as the actual wrap might get soggy. But, I still had plenty left over after making three rather large wraps and I couldn’t let that go to waste!! Thankfully, Ziploc® brand saved the day again, and I was able to put the rest in one of my trusty Ziploc® brand containers with One Press Seal. Then, I just stacked them nicely in the refrigerator 😛
Here is your recipe for Guacamole Quinoa Chicken Wraps:
- ½ cup quinoa
- 1 cup water
- 2 ripe avocados, flesh scooped out and mashed slightly
- 1 large tomato, chopped
- ½ red onion, chopped
- Juice of one lime
- 2 cups fresh sweet peas
- 2 cups cooked chicken, shredded or diced
- sea salt and fresh ground pepper to taste.
- whole grain wraps
- Cook quinoa according to package instruction and set aside to cool.
- Combine the avocados, tomato, red onion and the juice from one lime in a large mixing bowl.
- Add fresh peas and stir to combine
- Add cooked chicken and quinoa to the guacamole and stir to combine
- Scoop as much chicken guacamole quinoa mixture as desired to a wrap. Fold the top and bottom of wrap and roll up burrito-style.
- Cut in half if desired. Enjoy!!

Hi Laura, If you store the filling in an air tight container, you should be fine. The avocado will brown if it gets exposed to air, so make sure that you keep out as much air as possible. Thanks for your comment!! Becky 🙂
