This weekend has marked the “official” start of summer across the country!! However here in the south, it has been hot and feeling very summer-like for quite a while. I have absolutely no desire to heat up my oven when the weather outside is 95 degrees with 95% humidity!! I am trying to keep my electric bill as reasonable as possible, yet stay confortable…no one wants to sweat inside of their air conditioned home 🙂
Today just happens to be National Blueberry Cheesecake Day too! When Driscoll’s asked me to help them celebrate, I knew that I wanted to participate, but definitely didn’t want to have to bake!! Y’all know I can’t bake to save my life and with it being so hot, I knew that I needed a “no-bake” and “Becky’s Best Bites” approved recipe.
Reduced-fat cream cheese, non-fat vanilla greek yogurt and unsweetened almond milk with a hint of honey combine to form the lucious yet healthy cheesecake filling for these No Bake Blueberry Cheesecake Parfaits. Crushed graham crackers make the simple “crust that is paired simply with the sweet and juicy blueberries.
No butter, no oil and no added sugars are needed with this blueberry cheesecake recipe! The blueberries are nutritional powerhouse themselves that are packed with antioxidants, fiber and vitamins!! All-in-all these treat just makes me happy!!
Here is your recipe for No Bake Blueberry Cheesecake Parfaits:
- 2 (8 oz.) packages reduced-fat cream cheese
- 2 (5 oz.) containers non-fat vanilla greek yogurt
- 2 tsp. local, fresh honey
- ½ cup unsweetened almond milk
- 10 low-fat graham crackers
- 1 pint Driscoll's blueberries
- Soften cream chease by bringing to room temperature or using the microwave on a low setting.
- In a mixing bowl, add softened cream chease, greek yogurt and honey. Beat with an electric mixer on low slowly to combine adding the almond milk gradually to achieve the desired texture. The filing should be thick and smooth.
- Place graham crackers in a food processor and gently pulse to crumble, careful not to turn them to dust.
- Divide graham cracker crumbs evenly among five dessert dishes, stemless wineglasses or mason jar.
- Carefully spoon 2 tbsp. of the cream cheese filling to each dish or glass. Top with 2 tbsp. of fresh blueberries per dish.
- Divide the remaining cheesecake filling among the serving dishes, top with a few more blueberries and enjoy!!
