In sticking to my “wedding dress” diet, where I have been focusing on eating more clean, whole foods and drinking lost of water!! I am pleased to report that I have already lost 4 pounds 🙂 It has only been a couple of weeks, but I am proud of the results so far. Just throw all the ingredients in the slow cooker in the morning and you have dinner ready that evening!! This one is perfect for Cinco de Mayo too!! All the lovely Mexican flavors in a easy and healhty dish that you could serve at any celebration!
I was doing some “clean eating” research and came across this recipe from the Gracious Pantry and it became the inspriation for this Slow Cooker Southwest Chicken recipe.
I didn’t have all the ingredients on hand and didn’t want to go to the store, so I used what I always have on hand. I make my Corn, Black Bean and Beef Soft Tacos  about once a week because our five year old loves them!! We usually have “Taco Tuesday.” So I used some of those flavors just with chicken and in a slow cooker.
We are keeping it super-simple with this one y’all!! Hope you enjoy it as much as we did 🙂
Here is your recipe for Slow Cooker Southwest Chicken:
- 1 large sweet Yellow Onion, chopped
- 3-4 cloves of Fresh Garlic, minced or pressed
- 1.5 lbs Boneless, Skinless Chicken Breasts
- 1 tbsp. Cumin
- 1 tsp. Chipotle chili powder (more or less depending on how spicy you like it)
- 1 tbsp. chili powder
- 1 tsp. crushed red pepper flakes (more or less depending on how spicy you like it)
- sea salt and fresh ground pepper
- 1 cup reduced-sodium chicken stock
- 1 can (14.5 oz) of black beans
- 1 cup Frozen or fresh corn
- 1 avocado, sliced
- Place a slow cooker liner in the bowl of the slow cooker or spray liberally with non-stick cooking spray.
- Add the onions and garlic to the bottom of the bowl. Top with chicken breasts.
- Add cumin, chipolte chili pepper, chili pepper, red pepper flakes, salt and pepper.
- Pour chicken broth over the chicken mixture and stir to combine.
- Cover and cook on low for 7-8 hours or on high for 3-4.
- minutes before serving, add the black beans and corn and continue cooking.
- The chicken is done when it shreads easily.
- Top with avocado slices and serve over brown rice or quinoa. Also would be great as a taco filling.
