These Spicy Tarragon Green Beans are perfect for any special occasion. Start thinking about Thanksgiving, Christmas and other special occasions coming up for the remainder of the year. The beauty of these babies is that they are easy enough for any night.
My little porch garden is over-flowing with many things (I am not complaining…I know I am blessed). The tarragon and jalapeños are especially abundant. I came up with this recipe as a way to use up some of my excess from the garden.

Here is the recipe for Spicy Tarragon Green Beans:
- 1 lb. fresh green beans, washed and trimmed
- 2 tbsp. extra virgin olive oil
- 4 cloves garlic, finely minced or pressed
- 2 jalapeños, ribs and seeds removed, finely chopped
- 2 tbsp. fresh tarragon, chopped
- sea salt and fresh ground pepper, to taste.
- Set up a large pot with about an inch of water with a steamer basket inside. Place green beans in steamer basket. Cover and bring to a boil over high heat
- Steam green beans for 2-3 minutes or until green beans are just slightly cooked and bright green, still crunchy.
- While the green beans are steaming. Place a large skillet over medium-high heat. Add olive oil.
- Once oil is hot, add garlic and jalapeños and sauté until garlic until slightly browned.
- Add steamed green beans, tarragon, salt and pepper.
- Toss to combine and cook for 1-2 minutes longer.
- Serve warm.
