Super Simple Skillet Lemon Pepper Chicken is a healthy weeknight dinner recipe that gets an easy, crowd-pleasing and tasty meal on the table in under 30 minutes. It’s one of those meals to keep on the rotation for those days that you just don’t feel like cooking.
Let’s face it…we all have “those” days. I am talking about days where we just don’t want to do anything!! I am definitely having one of those today 🙁 I can’t get motivated to do anything and the day is just dragging by. Of course, there is plenty to do…um work, blogging, wedding planning…but it’s just not happening! It’s a Monday too! Not only is it a Monday, but it is the Monday after a holiday weekend!! Double whammy 😉 It is probably a miracle that I am actually writing this post, but I have a feeling that it isn’t going to be too long of one 😉
Luckily the recipe that I am sharing is perfect for days like today! I don’t feel like cooking at all (even when I usually love to cook…hello, my hobby is being a “food” blogger). This recipe is also perfect for super hectic nights where you are running a thousand different directions but still need to get a good meal on the table. So Super Simple Skillet Lemon Pepper Chicken comes to the rescue on days like today.
Y’all I have a quick confession…I took these pictures probably about 2 months ago and really thought that this recipe wouldn’t make it on the blog. But now that I am writing this post, I am glad it is getting posted for a few reasons:
- It was really good and really easy!
- I know a lot of you are super busy and need go-to recipes like this one!!
- Now I know what is for dinner tonight because I am having “one of those” days 😉
Look at that saucy-goodness! This chicken is perfect for serving over brown rice, quinoa or whole grain pasta. You could even add some fresh broccoli or asparagus to the mix the last few minutes of cooking. I have some broccoli in the frig that I will be adding in tonight 🙂
Here is your recipe for Super Simple Skillet Lemon Pepper Chicken:
- 1 tbsp. extra virgin olive oil
- 1 medium vidalia or yellow onion, chopped
- 3 cloves of fresh garlic, minced or pressed
- 1.5 lbs. boneless, skinless chicken breasts, chopped into 1 inch pieces
- 1 tbsp. lemon pepper seasoning
- 1 tsp. crushed red pepper flake (more or less depending on your taste)
- sea salt & fresh ground pepper, to taste
- ½ cup dry white wine
- ½ cup reduced-sodium chicken broth
- 2 tsp. fresh thyme, leaves removed from stems
- Heat olive oil in a large skillet over medium-high heat.
- Once oil is hot, add onion and garlic to the pan. Sauté for 3-4 minutes or until the onion is translucent and being to soften.
- Add chicken to the pan and continue to cook for 5-7 minutes or until the chicken is cooked through.
- Add lemon pepper seasoning, crushed red pepper flake, salt and pepper and stir to combine.
- Add wine to deglaze the pan and cook for a couple of minutes to cook out alcohol and reduce by about half.
- Add chicken broth to the pan and stir to combine. Sprinkle with thyme leaves.
- Serve immediately over brown rice, quinoa or whole grain pasta.
