It is hard to believe but in just a few short weeks the kiddos will be heading back to school. In some ways, it seems like summer just started and in other ways it seems like that First Day of School will NEVER get here!! Mamas – you know what I am talking about 😉 LOL 🙂
I think I might have a real obsession with “mini” food or “bites!” LOL 🙂 In my defense, the name of this blog is “Becky’s Best Bites!!” A few of my favs that I have shared with you are my Blender Peanut Butter Banana Oatmeal Muffins, Mini Egg Muffin Bites with Spinach and Turkey Sausage and Quinoa Meatballs Baby Finger Food. And as I got to thinking about back to school, I thought my mini obsession could really come in handy! I wanted to come up with a filling and nutritious snack that I could offer or a quick and easy meal solution for those crazy weekday nights when sports begin this fall. Luckily Village Harvest had sent me three of their new Organic Benefit Blends to check out and I thought that they would be perfect for my latest mini creation, Mini Veggie Bites.
Village Harvest Organic Benefit Blends come in three varieties, Organic Antioxidant Blend, Organic Ancient Grain Blend and Organic Protein Blend. Each unique blend offer a distinctive combination of healthful goodness. The Organic Antioxidant Blend is a blend of black rice, black lentils and black quinoa. The Organic Ancient Grain Blend is a combination of millet, white quinoa, red quinoa and buckwheat. The Organic Protein Blend is a mix of brown jasmine, lentils and red quinoa. I chose the Organic Ancient Grain Blend for my Mini Veggie Bites.

Like I mentioned, I decided on the Village Harvest Organic Ancient Grain Blend for my Mini Veggie Bites. I also loaded them up with tons of veggie power like spinach, carrots and red and yellow bell peppers! Yay! There is a rainbow of antioxidants in those mini veggie bites plus you have the goodness of the ancient grains too!
My Mini Veggie Bites are quick and easy to put together too!! First, cook up the Village Harvest Organic Ancient Grain according to package instructions.
Add our rainbow of veggies and some cheese and eggs to bind everything together 🙂
Mix it all up and spoon into mini muffin pans. Bake and enjoy these Ancient Grain Mini Veggie Bites as a healthy after school snack! My 9 month old nephews have been enjoying them as finger foods for their meals too:) They are the perfect size for little hands. We also have frozen a bunch to save for quick and easy Meatless Mondays or as a ready-made side.
Here is your recipe for Ancient Grain Mini Veggie Bites:
- 1 cup Village Harvest Organic Ancient Grain Blend
- 1 package (9-10 oz.) frozen chopped spinach, defrosted and drained.
- 1 cup finely chopped yellow bell pepper, seeds and ribs removed
- 1 cup finely chopped red bell pepper, seeds and ribs removed
- 1 cup matchstick carrots
- 1 cup shredded cheddar cheese
- 4 eggs
- 1 tsp. cumin
- 1 tsp. chili powder
- sea salt and fresh ground pepper, to taste.
- Preheat oven to 350 F.
- Spray two 24 count mini muffin tins with non stick cooking spray or use 2 silicone mini muffin pans. Set aside.
- Cook the Village Harvest Organic Ancient Grain Blend according to package instructions and let cool slightly.
- In a large mixing bowl combine cooked grains, spinach, bell peppers, carrots, cheddar cheese, eggs, cumin, chili powder, salt and pepper. Mix until thoroughly combined.
- Spoon veggie grain mixture into the mini muffin pans.
- Bake for 20-25 minutes or until golden brown.
- Serve immediately or let cool if freezing.
Then place in freezer bags or vacuum seal.
Freeze for up to 3 months.
To reheat: place in the microwave for 30 seconds on high, in intervals until they are warmed through.

This is tagged as vegetarian/vegan. They are not vegan. They have egg and cheese in them. I substituted a flax egg and omit cheese. Good idea, followed the recipe loosely, but make sure your tags are proper.
