Asian Ground Beef Skillet is a departure from my typical slow cooker weeknight meals. Oh, and in case you were wondering why I do so many slow cooker meals on Becky’s Best Bites, it is because of a few things. Number 1 is that I love how simple it is to throw ingredients into your slow cooker in the morning and come home to a dinner that is done! Not to mention that the house smells fabulous 🙂 Number 2 is that my job has odd working hours. It isn’t the typical 9 to 5 or 8 to 5 that typical professionals work. See I work at a community art center and we are open from 10 to 6pm. So my work hours are 9:45 am to 6:15 pm. Then I have a 20 minute commute home, so I am not in the house until, at the earliest 6:45 pm. And at that point to start cooking means that dinner wouldn’t be until at least 7:30 – 7:45pm…and that just doesn’t work for us. But sometimes, I am just not in the mood for a slow cooker meal and the night that I made Asian Ground Beef Skillet was one of those nights. This meal is on the table in 30 minutes or less. Works for me.
This Asian Ground Beef Skillet is quick, easy and healthful…a real triple whammy 🙂 Seriously from the time that you take the first thing out of the panty to putting the first forkful in your mouth is literally 30 minutes. This recipe only calls for ingredients that you probably have on-hand…oh ok, with the exception of the fresh broccoli and mushrooms…unless you are like me and always have those on-hand. I know..dork alert 😉 Doesn’t everyone buy bulk fresh broccoli and mushrooms at Sam’s Club on a regular basis? Ok so that is just me, huh?  But in all seriousness, you really should look into it if you have a membership to a club store like Sam’s. It will save you tons of money! Typically a head of broccoli in the grocery store is about $2.50 – $3.00, right (unless it happens to be on sale)? At Sam’s, you can get a HUGE bag (3 lbs) of fresh broccoli florets (yes, they are already chopped for you and ready to go) for $4.00. The mushrooms are a better deal and Sam’s too but they aren’t sliced and are just white mushrooms and not baby bellas (at least at my store), so sometimes I get them and sometimes not.
We are going to keep our Asian Ground Beef Skillet healthy with using at least 93% lean ground beef. You could also use ground turkey or chicken or leave out the meat for a vegetarian option. I typically don’t use quick-cooking brown rice and go for the whole grain brown rice which takes about 45 minutes to cook. For this quick skillet meal, I did go ahead with the quick-cooking type that is done in 10 – 15 minutes. One more healthy tip is to swap out the soy sauce that the recipe calls for with Bragg’s Liquid Aminos. It tastes very similar to soy sauce but has absolutely no added salt (just a small amount of naturally occurring sodium). Made from NON-GMO soybeans, it is a protein source containing healthy amino acids.
- 1 cup quick-cooking brown rice
- 1 tbsp. extra virgin olive oil
- 1 large sweet yellow onion, chopped
- 3-4 bulbs garlic, minced or pressed
- 1 lb. 93% (or leaner) ground beef
- 16 oz. sliced baby bella mushrooms
- ¼ cup reduced-sodium soy sauce or Bragg's Liquid Aminos
- 1 (10 oz.) can healthy-request cream of mushroom soup
- ¼ - ½ cup of reduced-sodium or no-sodium beef broth
- 1 head of broccoli, chopped into florets
- ¼ cup cilantro, chopped (save a sprinkle for garnish)
- 1 tsp. cracked red pepper (more or less depending on how spicy you like it)
- Fresh cracked pepper to taste.
- Cook rice according to package instructions and set aside.
- Heat olive oil over medium-high heat until hot. Add onions and garlic and cook for 2-3 minutes, or just beginning to soften.
- Add ground beef and mushrooms and continue to cook, browning the ground beef and darkening the mushrooms until they give off their juices.
- Add soy sauce or liquid aminos, cream of mushroom soup and beef broth, stirring to combine.
- Add broccoli and continue to cook for approximately 10 minutes, or until the broccoli is bright green in color and beginning to soften. (You want the broccoli to still have a bit of a crunch but not raw).
- Add cilantro, red pepper and cracked pepper. (No salt because of the cream of mushroom soup and soy sauce).
- Serve over cooked rice and garnish with remaining cilantro.
