This avocado cilantro lime chicken salad is perfect to make in bulk on your prep day and then use throughout the week for meals. Quick and easy to put together and very versatile.
You could eat it on it’s own, on a huge pile of salad greens, in a wrap, over quinoa or brown rice. Be creative and have fun.
Avocado Lime Chicken Salad

Ingredients
- 3 boneless, skinless chicken breasts
- 1 avocado, chopped,
- ¼ red onion, chopped
- juice of 1 lime
- 2 Tbsp fresh cilantro, chopped
Instructions
Option 1 for cooking chicken
- Place frozen chicken breasts in a slow cooker with a splash of chicken stock and cook on low for 8 hours or high for 4 hours
Option 2 for cooking chicken
- Poach chicken in a pot of boiling water for 15-20 minutes or until cooked through
Option 3 for cooking chicken
- Grill on an indoor or outdoor grill for 5-7 minutes each side or until cooked through
- Let chicken cool and then shred (if using slow cooker method, the shredding will be done for you).
- Mix with all other ingredients and enjoy!
