Cilantro Edamame Hummus is a healthy appetizer or snack recipe. No oil or tahini is needed to make this yummy, nutritious and easy treat.
Happy Monday!! Is your week off to a good start? Our family got some exciting news today and I am super excited 😆 I can’t share it publicly yet (no, I am not pregnant) but I will share the good news with you as soon as I can! Sorry I know that was mean to bring it up and not share, but I am just soooo excited!! I can’t contain myself 😳
Since St. Patrick’s Day is this week, I decided to share something green with y’all 😛 I know super original, huh:roll: Anywho, it may not be Irish but I am totally digging my Cilantro Edamame Hummus!! I decided I wanted to make some hummus yesterday afternoon since we were having family over for a Sunday dinner. My dad’s birthday was last week and he had requested that I make my nearly famous(well…in my family at least) 5-Layer Spicy Oven Ready Lasagna Recipe for Sunday dinner. I thought I would try something a little different with this hummus. First I thought that in honor of St. Patrick’s Day, I would use edamame in place of the classic chickpeas that you usually find in hummus to make it green.
I didn’t have any tahini on-hand and was too lazy to go to the store, so I decided to nix the tahini in this recipe 😉 Then I thought that I would try no oil too to really make this a lower fat and calorie dip! We love cilantro and it is nice and green, so I went with that. Then fresh lemon and lemon zest really make the flavors pop!!
Then my Cilantro Edamame Hummus was born!
I decided to serve the hummus with pretzel thins, but you could totally try my healthy pita chips too or fresh veggies!!

Here is your recipe and nutritional information for Cilantro Edamame Hummus:
- 1 (12 oz.) bag frozen shelled edamame (green soybeans)
- 3 cloves garlic
- 1 bunch cilantro
- Zest and juice of one lemon
- ½ cup water (more or less as needed)
- 1 tsp. cumin
- 1 tsp. chipotle chili powder, more or less depending on taste.
- Sea salt and fresh ground pepper, to taste.
- Cook edamame according to package instructions. Drain and let cool.
- Place garlic cloves in the food processor and process until very finely chopped. Scrape down the bowl.
- Add cilantro to the food processor and process until chopped. Scrape down the bowl.
- Add zest and juice of one lemon.
- Turn on food processor and slow pour water in, small amounts at a time, until you achieve a good consistency.
- Scoop hummus out and into an air tight container and chill for at least an hour before serving.
