These quick and easy No-Bake Cookie Dough Bites are a no-bake treat that’s high in fiber and loaded with flavor. They can be made in just five minutes. So easy and yummy for the kiddos to help and then enjoy as a snack. They’re a healthy choice when you’re craving something sweet.
I love that they are made from chickpeas, oats and peanut butter powder for a good amount of fiber and protein, but also low in sugar. My four year old daughter helped me make them (which she loved) and then she enjoyed them as a treat too! She has NO idea that they are good for her too! 🙌🤣 #momwin
- 1 (15-oz.) can chickpeas (garbanzo beans), drained, rinsed
- ¼ cup peanut butter powder (I used chocolate peanut butter powder)
- 3 Tbsp. dry rolled oats
- 2 Tbsp. unsweetened almond milk (+ splash more if too dry - I had to do this)
- 2 tsp. pure vanilla extract
- ¼ tsp. ground cinnamon
- ¼ tsp. sea salt (or Himalayan salt)
- 3 Tbsp. cacao nibs or mini chocolate chips
- Add chickpeas, peanut butter powder, oats, almond milk, extract,
- sweetener, cinnamon, and salt to a food processor; blend until smooth,
- scraping down sides as needed.
- Transfer to a small mixing bowl. Add cacao nibs or mini chocolate chips; stir to combine.
- Roll into 12 balls, approx. 1½ inches each. Enjoy immediately, or store
- refrigerated in an airtight container for up to 4 days
