Corn, Black Bean and Beef Soft Tacos are a tasty, quick, easy and healthy weeknight meal to add to the rotation. They are definitely kid-friendly and approved by the whole family. These tacos are full of flavor, fiber-rich (thanks to the corn and black beans) and ready in 20 minutes or less.
I have chatted before about my boyfriend’s 5-year-old son, Hank, in posts like this one: Summer Gazpacho Salad and a 5 Year Old’s Birthday! He is a good eater, but he isn’t a fan of ‘healthy’ meals. Chicken nuggets, BBQ sandwiches and chips are among his favs! I have tried (and failed) with some of my recipes.
However, these Corn, Black Bean and Beef Soft Tacos are a winner with the 5-year-old!! He actually requests these whenever he comes down to stay with us 🙂 Do what? He is requesting one of my recipes?? Yay! Big win!!
We’ve got no package taco mix here, only fresh herbs and spices go into this taco mix. Adding fresh corn and black beans gives these tacos a fiber-boost that the picky 5-year-old didn’t even notice.
MMMMM…up close and personal to the Corn, Black Bean and Beef Soft Tacos!!! Can you understand why he ate 4 of them?!? Yes, you read that right the 5-year-old ate 4 TACOS!!!
Here is the recipe for Corn, Black Bean and Beef Soft Tacos:
- 1 tbsp. extra virgin olive oil
- 1 large, sweet yellow onion, chopped
- 3 fresh garlic cloves, minced or pressed
- 1 lb. 93% lean ground beef
- 1 tbsp. chili powder
- 1 tsp. chipotle chili powder
- 1 tbsp. cumin
- ⅔ cup water
- 1 (15 oz.) can reduced-sodium black beans, drained and rinsed
- 12 oz. frozen corn
- sea salt and fresh ground pepper to taste.
- 16 whole wheat tortilla soft taco shells
- Salsa, sour cream or greek yogurt and cheese for garnish
- Heat olive oil in a large skillet over medium-high heat.
- Once hot, add onion and garlic to the pan. Sauté for 4-5 minutes or until the onion has softened and starts to turn translucent.
- Add ground beef. Break apart as it starts to cook and brown or cook until no pink remains, approximately 5-7 minutes.
- Add chili powder, chipotle chili powder, cumin and water to the ground beef as it is cooking.
- Once cooked through, add black beans and corn. Cook to heat the black beans and corn through.
- Add salt and pepper to taste.
- Warm tortillas by placing on a microwave safe place covered with parchment paper. Microwave for one minutes.
- Assemble by placing a spoonful of the beef mixture on the tortilla with sour cream or greek yogurt, salsa and cheese.
