So everyone but Dad likes salmon and we usually get it from his seafood guy and plan to have it on a night either when he isn’t going to be home or he grabs a piece of another fish that he likes and we throw that on the grill beside the salmon if he is going to be there.
Well…we had a bit of an “incident” last time that we cooked salmon… We typically cook it on cedar planks on the grill and it is delicious! Well this particular time, the cedar planks caught on fire (I promise I did soak them in water all afternoon)!! Not sure why, but they burst into a ball of flames and in our scurry to get the fire put out, a piece of burning cedar plank feel into the pine straw and that caught on fire too!!
We were able to put out the fires without any damage. But needless to say, that could have been really, really BAD!!! So I was slightly hesitant to grill salmon again any time soon, so the hunt began for a new way to cook salmon.
While searching on my trusty Pinterest for Salmon recipes, the one I kept seeing over and over again was the Pioneer Woman’s Simple Roast Salmon. I followed her cooking method with the Easiest Baked Salmon with Fresh Herbs.
Easiest Baked Salmon with Fresh Herbs is a no-fail way to cook salmon!
You can really see in that picture just how moist, flaky and crazy gorgeous this salmon recipe is! You can use any combination of fresh herbs that you like too! I used dill and cilantro, but you really could use anything that you like 🙂

Here is the recipe for Easiest Baked Salmon with Fresh Herbs:
- 1 whole side of salmon (about 2½ to 3 lbs.)
- 2 tbsp. extra virgin olive oil
- ¼ cup fresh dill, chopped (or herb of choice)
- ¼ cup fresh cilantro, chopped (or herb of choice)
- sea salt and fresh ground pepper
- juice of half a lemon
- Line a large baking dish with aluminum foil
- Add the salmon to the dish.
- Mix the olive oil, fresh herbs, salt, pepper and lemon juice in a small bowl.
- Pour the mixture over top of the salmon.
- Place the dish containing the salmon in a cold oven.
- Heat the oven to 400 degrees.
- Set a timer for 25 minutes.
- The salmon should be just opaque all the way through, flaky and still moist.
- Serve immediately.
