When I started thinking about what to make for this post, I almost immediately went to a cheese sauce. I remember having SUPERPRETZELS as an after-school snack as a kid. I wanted to recreate that memory for my daughter. I wanted to come up with a healthier version for us, one with less fat that’s not processed. While at first I was skeptical that I could make one without butter or oil and still keep it creamy and velvety, after a few attempts, I came up with one that fit the bill!
It is getting close to my favorite season of the year: football. Only a few more weeks left and the countdown is on…yay! When I made these for the blog, I brought the extras over to my parent’s house for an appetizer before dinner. I know I have mentioned it before, but my parents live right next door to us, and I cook dinner for them most nights. We have a good arrangement, IMHO – if I cook, they will buy the groceries and we all eat together. I think it is a win-win situation and I love that my daughter is with her grandparents every day!

Remember earlier when I said that this easy cheese sauce paired with SUPERPRETZEL Soft Pretzel Bites would be making a regular appearance on our football game day spreads? Well, I wrote that before I brought them over to my parent’s house – man was I right! Dad said that they MUST be included on ALL of our game day spreads! LOL! I think he might have been exaggerating a little…but he thought this snack was that good! So…let’s get to the easy recipe, shall we?
Here is your recipe for Easy Cheese Sauce:
- 1 cup low-fat (1% or 2%) milk, divided
- 4 tsp. all-purpose flour
- ½ cup shredded sharp cheddar cheese
- ½ tsp. garlic powder
- sea salt and fresh ground pepper, to taste
- Optional: ½ tsp. crushed red pepper flake
- Add ¼ cup milk and flour in a small saucepan before placing on the stove. Whisk to combine and continue until all flour lumps have dissolved.
- Place saucepan on the stove and set to medium heat.
- Add remaining ¾ cup milk and whisk to combine.
- Bring to a boil, stirring frequently.
- Reduce heat to low and whisk constantly for 1-2 minutes or until sauce thickens slightly.
- Remove from heat and add cheese, garlic powder, salt, pepper and crushed red pepper flakes (if using)
- Stir in a figure-eight motion until cheese is completely melted.
- Serve immediately
As pictured I had prepared this for my 2½ year old daughter, so I did not add the optional crushed red pepper flakes.
Can be refrigerated for 3-4 days. Reheat in the microwave for 1 minute or so.
