My personal fav is the Ranchero Steak & Eggs Bowl!! The combination of eggs, seasoned red potatoes, chipotle salsa, steak, onions, cheddar cheese and poblano peppers is right up my alley π It has a bold flavor thanks to the chipotle salsa, but it isn’t too spicy. Baby Girl certainly keeps me on my toes, but once I get her down for her morning nap, I can have a great breakfast ready for myself in less than 5 minutes.
You never know how long you have with an infant’s nap (they can be 15 minutes or 2 hours…LOL) so I need to grab my breakfast quickly! Baby Girl has one tooth that is starting to come in so she is being more needy and fussy as of late.
