We love Chinese food at our house, but I don’t like ordering take-out from the local Chinese restaurants because I struggle with serving that calorie and fat-loaded food to my family! Anyone with me?

Easy Spicy Unfried Rice | beckysbestbites.com

So something that I do like to do is to make what I call Chinese “take-out fake-out.” That is where I recreate our favorite dishes at home where I can control what goes into it! I showed you my Pork and Vegetable Baked Egg Rolls a couple of days ago and I promised this recipe for Easy Spicy Unfried Rice that we had with them on our Chinese Night and now I am delivering 😉

Easy Spicy Unfried Rice | beckysbestbites.com

I took my inspiration for my Easy Spicy Un-Fried Rice from this recipe for an Almost Classic Pork Fried Rice from My Recipes to start my version. I used just a little bit of sesame oil (for that classic flavor) but paired it with healthier extra virgin olive oil. I also used brown rice instead of white (easy swap that has become a habit in our home). Then I added more veggies to the mix 😛  If you need a wok to make your Chinese at home, here is one: http://amzn.to/1RaYa9u. Or you could just be like me and use a large skillet 😆

My Easy Spicy Unfried Rice was a bit hit along side my Pork and Vegetable Baked Egg Rolls for our Chinese Take-Out Fake-Out Night! Super easy and delicious, it makes a ton so you will have leftovers 🙂 We love leftovers 😛

Serves: 8
Ingredients
  • 1 tsp. sesame oil
  • 1 tbsp. extra virgin olive oil
  • 1 cup matchstick carrots
  • 2 jalapeños, seeded and chopped
  • 3 green onions, white and green parts chopped
  • 3-4 cloves garlic, minced or pressed
  • 1 tbsp. fresh ginger, grated
  • 4 cups cooked, chilled brown rice
  • 3 eggs
  • 3 tbsp. mirin
  • 3 tablespoons lower-sodium soy sauce
  • 1 tsp. crushed red pepper flakes (more or less depending on taste)
  • sea salt and fresh ground pepper, to taste
  • 3 tbsp. cilantro, chopped
Instructions
  1. Heat oils in a wok or large skillet over medium-high heat.
  2. Add carrots, jalapeños, green onions, garlic and ginger to pan. Sauté for about a minute.
  3. Add brown rice and stir. Sauté for 3-4 minutes or until the rice begins to brown.
  4. Make a well in the center of the rice mixture. Add eggs and scramble by stirring constantly until soft cooked. Once cooked, mix in the rice mixture.
  5. Add mirin, stir and cook for a minute or so, or until the mirin is mostly absorbed.
  6. Add soy sauce, red pepper flake, salt and pepper and stir to combine.
  7. Remove from heat and add cilantro.

This recipe looks fantastic! I’m going to give it a try, but omit the jalapeños for the kids and sub in some chopped water chestnuts (my kids are still under 7). It looks like this is gluten free too, since you didn’t use soy? Even better!
