Chicken Alfredo Pasta is a healthy and easy dinner using some my favorite fall food products finds, Ragu Simply Creamy Alfredo with Cauliflower & Traina Sun Dried Tomato Fruitons.

Let’s chat a bit about each one before diving into the recipe.

I am back at the gym several days of the week and I have set a goal of 100 oz. of water per day. I have always been pretty good at drinking my water, but I do get tired of plain ol water sometimes. 4. RAGÚ® Simply™ Creamy Alfredo with Cauliflower
I love a creamy alfredo sauce and I usually have a few jars in the pantry for quick alfredo recipes. However, I usually feel a little guilty about the fat and calories. This Simply Creamy Alfredo with Cauliflower is the answer to my guilt! It contains 1/2 the fat and calories of RAGÚ® Classic Alfredo Sauce because they have replaced the heavy cream with milk and cauliflower. I used it in my Creamy Chicken Alfredo Pasta (recipe below) but you should also try this Alfredo with Chicken and Tomato too. It sounds super yummy! 5. Sun-Dried Tomato Fruitons and Sun-Dried Cherry Fruitons from Traina® Foods
I am always looking for new, fun healthy snacks. Fruitons® are my new go-to! They are sun-dried fruit with one simple ingredient – either cherries or tomatoes! You can eat them on their own, sprinkle them on your favorite foods or add to any recipe that calls for sun-dried fruit. I used the sun-dried tomatoes in my Chicken Alfredo Pasta and it was delish!!
- 1 box (16 oz.) whole wheat penne pasta
- 1 lb. asparagus, trimmed and cut into small pieces
- 2 tbsp. extra virgin olive oil
- 1½ lbs. boneless, skinless chicken breasts, chopped into bite-sized pieces
- 1 medium sweet yellow onion, chopped
- 3-4 fresh garlic cloves, minced or pressed
- ¼ cup Sun Dried Tomato Fruitons
- ⅓ cup dry white wine
- 1 jar (24 oz.) RAGÚ® Simply™ Creamy Alfredo with Cauliflower
- Grated Parmesan Cheese for garnish
- Cook pasta according to package instructions to al dente, adding asparagus during the last two minutes of cooking. Reserve ½ cup of the starchy cooking water, drain and return to hot pot.
- Heat olive oil in large skillet over medium-high heat.
- Once hot, add the chicken breast and cook for 4-5 minutes.
- Add onion and garlic and continue to cook for another 4-5 minutes or until the onion is tender and the chicken is cooked through.
- Add Sun Dried Tomato Fruitons and wine and bring to a boil and reduce by half.
- Add the RAGÚ® Simply™ Creamy Alfredo with Cauliflower, stir to combine and heat through.
- Stir the sauce with the starchy cooking water, hot pasta and asparagus.
- Garnish with grated parmesan cheese.
