I have been sharing with y’all a lot about how we are trying to get back into our healthy routines this year. To recap, I was really good about my diet when I was pregnant with Baby Girl. I let my usually healthy routines slip and I got into a rut of eating more convenience foods or whatever was available.
I felt the consequences, especially fatigue and bloating, so I knew as the New Year approached and Baby Girl got more independant that I had to make some changes. I am happy to report that we are doing much better! We’ve got our diets back on track and are incorporating exercise back into our routines 😊
I am now always on the lookout to get more veggies into our diets (especially Baby Girl’s – she tends to ignore the veggies that are on her plate. 😞 I continue to put them there at each meal, but end up throwing in the trash can…). I decided to try the carrot spirals first after finding this Garlic and Parmesan Carrot Spirals recipe on their website. I microwaved the carrot spirals for 6 minutes and then drained them (like you do with traditional pasta). Sautéd some garlic in olive oil and then stirred in parmesan, salt, pepper, red pepper and parsley = DONE! Easy peasy & yummo 😍 We are going to have them for dinner again alongside some grilled chicken!!
Here is your recipe for Garlic and Parmesan Carrot Spirals:
- 1 (12-ounce) package Green Giant Veggie Spirals™ Carrot
- 3 Tablespoons olive oil
- 2 tbsp. fresh garlic, chopped, minced or pressed
- 3 tbsp fresh Italian parsley, chopped
- ⅓ cup grated parmesan cheese
- Optional: ¼ tsp. of ground black pepper and/or ½ tsp. crushed red pepper
- Cook Green Giant Veggie Spirals™ Carrot according to package directions, drain and keep warm. Preheat a large nonstick skillet over medium heat.
- Add olive oil, garlic, and parsley to the pan, cook until garlic is translucent, 2-3 minutes. Turn off heat.
- Add warm carrot spirals, cheese, black pepper (if desired) and crushed red pepper (if desired). Gently toss together until well combined. Serve hot.
- Serving Suggestions: For added protein pair this dish with diced grilled chicken, beef, or pork.
