Healthier Slow Cooker Au Gratin Potatoes is a healthy and easy Easter recipe to add to the holiday menu. No butter or cream added to this side dish, but you still have all that creamy goodness thanks to addition of nonfat greek yogurt!

I can’t believe that it is March already and Easter is just around the corner! It is crazy how fast this year is flying by!! Anyone with me??? But I am glad that it is almost springtime and the days are getting longer and warmer!! We are having some gorgeous weather right now with temperatures in the upper 70’s and even some low 80’s 😆
Just this past weekend the whole family went down to Orlando to go to a Braves Spring Training game for my dad’s birthday and we had a blast 😀 My dad loves all things Braves and baseball, so he was in heaven!! We were supposed to just go down for a day trip, but Chris surprised lil man and me with a stay at an amazing resort called the Orange Lake Resort!! We stayed in a lovely two bedroom villa and this place has all the amenities! From a 2-acre Waterpark with a tropical lazy river, 7 pools, waterslides and an 80-acre lake with watersports to 4 golf courses (hubby’s fav) and putt-putt and plenty of other family friendly activities!! We didn’t even leave the resort during our time there. There was that much to do!! Nope, they didn’t pay me or give us a free stay for me to mention all of this…I just really enjoyed our stay there and wanted to share that with you. Nobody wanted to leave and we are planning on going back soon 😛
On the car ride home, I started thinking about what I wanted to serve for Easter dinner…I have already had requests for the Jack Daniel’s Glazed Ham that I made for Christmas (I promise that it will make it to the blog soon) and I really wanted to try again on an au gratin potatoes (I had a total fail on Christmas 😥 ) I decided that I would try my hand at au gratin potatoes again and BEFORE Easter…
Spoiler Alert!! These Healthier Slow Cooker Au Gratin Potatoes turned out amazing!! Everyone loved how creamy and tasty they turned out and couldn’t believe that I didn’t use any butter or cream! They did all the heavy lifting so we could do all the get in my belly eating 😆

Here is your recipe and nutritional information for Healthier Slow Cooker Au Gratin Potatoes:
- 3 lbs. medium russet potatoes, peeled and sliced as thin as possible
- 1 tbsp. extra virgin olive oil
- 2 medium yellow onions, chopped
- 4-5 cloves garlic, minced or pressed
- 3 tbsp. flour
- 1½ cup low fat milk
- 1 tsp. fresh ground nutmeg
- sea salt and fresh ground pepper, to taste
- ½ cup nonfat greek yogurt
- 1 cup shredded cheddar jack cheese
- Chopped parsley and grated parmesan cheese for garnish
- Slice potatoes as thin as possible. I use the slicer attachment for my food processor to make quick and easy work of this and to get the potatoes super thin.
- Heat olive oil in a large sauce pan over medium heat.
- Once hot, add onions and garlic and sauté for about 5 minutes or until the onions are soft and turning translucent.
- Sprinkle in flour, stir to combine and form a paste, cook flour for one minute.
- Add milk slowly, whisking to combine and bring to a low simmer.
- Add nutmeg, salt and pepper.
- Once the mixture thickens, remove from heat and stir in greek yogurt and shredded cheese.
- Whisk to combine and melt cheese.
- Line your slow cooker with a slow cooker liner (best for easy clean-up) or coat with nonstick cooking spray.
- Add ⅓ of the sliced potatoes to the bottom of the bowl and cover with ⅓ of the cheese mixture.
- Repeat two more times, pouring remaining cheese mixture over the top making sure that the potatoes are covered.
- Cover and cook on high for 2 hours or low for 4 hours.
- Pierce potatoes with a fork or knife to make sure they are cooked through and tender.
- Serve with parsley and parmesan cheese.
