My Honey Lime Mexican Chopped Salsa combines black beans with summer garden-fresh corn, zucchini, summer squash, bell peppers, jalapeños, tomatoes and cilantro. It perfect as an easy, no-cook, side dish to go with any of your summer grilling favorites. It also pairs well by itself with whole grain tortilla chips for a quick and easy appetizer.
My little organic garden is over-flowing with yummy, fresh veggies right now! It is getting to the point where I am scrambling to figure out what to do with all my treasures so they don’t go to waste!! I know it is a good problem to have and I am not complaining!!
I had decided to make a fun salsa using up some of the zucchini, summer squash, bell peppers, jalapenos, tomatoes and cilantro that I had gotten out of the garden. I thought I would add some fresh white corn and black beans to the mix that I would pick up at my next trip to Target. I go to Target at least once a week, on Saturdays with my mom & sister, and usually end up there during the week too! I just love Target, don’t you?
I like to work towards a more natural lifestyle for my family! I love to have a clean home, but would rather be able to do so with products that clean powerfully without harsh chemical fumes or residue. I have been a fan of Green Works Products for a while now and during one of my more recent trips to Target, I was checking them out in the natural section of the cleaning aisle. I picked up a new product that they just came out with for the kitchen (that always gets my attention) called Clorox Green Works Pump ‘N Clean.

Before I get to the recipe, let me tell y’all about my new favorite cleaning product for the kitchen, Clorox Green Works Pump ‘N Clean. It is so convenient and helpful in the kitchen! It helps you clean as you go, while cooking, eliminating that dreaded “big clean-up” at the end of each meal. You can even use it one-handed!! Just press your rag or sponge on the top and press down to dispense the cleaning liquid. It is food safe and safe to use on knives , cutting boards, dishes, utensils, stove tops, countertops, stainless steel, granite, wood, glass, inside refrigerators, microwaves and more! However, this product shouldn’t be used with raw meat or fish.
I always like to give the cutting board a quick clean before I start chopping!!
And the knife too!!
Thanks to Clorox Green Works Pump ‘N Clean, I have a clean knife and cutting board and now I am ready to make my Honey Lime Mexican Chopped Salsa 🙂
Let’s get started 🙂
- 2 ears of fresh corn (I used white corn)
- 1 fresh lime juice, zest and juice
- 2 tablespoons honey
- 1 tsp. cumin
- 1 tsp. chili powder
- 3 cloves garlic, minced or pressed
- 2 tablespoons extra virgin olive oil
- sea salt and freshly ground black pepper, to taste
- 2 medium bell pepper, chopped (I used yellow but use any color that you like)
- 1 jalapeno, seeded and chopped
- 1 large zucchini, chopped
- 2 medium yellow summer squash, chopped
- 2 cups cherry or grape tomatoes
- 1 can (14.5 oz.) black beans, drained and rinsed
- ½ cup finely chopped cilantro
- Place corn in microwave with the husks still on for 4 minutes. Set aside and let cool.
- Add the zest and juice of the lime in a small bowl. Add honey, cumin, chili powder, garlic and olive oil to the bowl and whisk to combine. Add salt and pepper to taste.
- In a large bowl, add chopped peppers, zucchini, squash, tomatoes, black beans and cilantro.
- Remove husks and silks off the cooled corn. Use a knife to cut the kernals off the corn in a separate bowl.
- Add corn kernals and dressing to the bowl with chopped veggies. Stir to combine.
- Chill for at least an hour before serving.

Isn’t that a good looking salsa? It has quickly become our new favorite summer recipe!
