I want to still put healthy meals on the table using a quick dinner recipe, but healthy cooking can bust the budget. I was trying to think of creative ways to make an easy family dinner and then I remembered that we ate Hamburger Helper a couple times a week as kids!   1. SautΓ© the onions, garlic and bell peppers until soft.
  2. Add ground beef and brown
  3. Add milk and water (per package instructions), simmer for 20 minutes.
  4. Add corn, beans and topping and heat through.

Ingredients
  • 1 tbsp. extra virgin olive oil
  • ½ large, yellow, sweet onion, chopped
  • 1 cup chopped bell pepper (combination of red, yellow, orange or your choice)
  • 3-4 fresh garlic cloves, minced or pressed
  • 1 lb. 93% lean ground beef
  • 1 box (7.5 oz.) Hamburger Helper Crunchy Taco
  • 1⅓ cup skim milk, divided
  • 2¼ cups hot water
  • 16 oz. frozen kernel corn
  • 1 can (15.25 oz.) reduced-sodium black beans, rinced and drained
  • Non-fat greek yogurt and cilantro for garnish
Instructions
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onion, garlic and bell pepper to skillet and sautΓ© until onion is translucent and veggies are soft, approximately 3-4 minutes.
  3. Add ground beef and brown, approximately 5 minutes.
  4. Stir in 1 cup milk, hot water, sauce mix and rice. Heat to boiling.
  5. Reduce heat. Cover, simmer about 20 minutes, stirring occassionally.
  6. Meanwhile, stir ⅓ cup milk and topping mix in a small bowl. Set aside.
  7. Add corn, black beans and topping. Stir to combine and heat through until rice is tender, 2-3 minutes.
  8. Remove from heat. Sprinkle with corn chips and garnish with greek yogurt and cilantro.
  9. Serve immediately and refrigerate any leftovers.
