Loaded Sweet Potato Skins will make any New Year’s party. Loaded with greek yogurt, cream cheese, chickpeas, spinach and kale and topped with lots of melty Kraft Natural Cheese, you and your guests will not even realize how nutritious they are!!
It is hard to believe that the holidays are behind us and the New Year is upon us!! I can’t believe how fast time has flown this year 🙄 Between the wedding, honeymoon and holiday, I haven’t done a very good job keeping my diet as balanced as I usually do, but I am determined to return the balance in the new year.
Speaking of the New Year, do you go out on New Year’s Eve? We don’t and really never have (well maybe I did in college). We like to stay home and invite over a few close friends and family for a small gathering. I wanted to make a fun dish for everyone to enjoy while waiting for the ball to drop, and decided on my Loaded Sweet Potato Skins. They are a real crowd pleaser and a more balanced, nutritious option for us.
After a quick and easy trip, I head home to get started on my Loaded Sweet Potato Skins.
The ingredients for my Loaded Sweet Potato skins include sweet potatoes (duh 😉 ), garlic, kale, baby spinach, greek yogurt, reduced-fat Kraft Philadelphia Cream Cheese, chickpeas, then topped with lots of Kraft Natural Shredded Cheese!!
Here is a quick tip for you…I don’t know about you, but I certainly don’t have time to bake my sweet potatoes in the oven for 45 minutes to an hour. My patience just can’t stand it and I always seem to be in a rush!! Well did you know that you can “bake” sweet potatoes in the microwave? I know, right!!
Just wash and scrub the sweet potatoes (especially important in this recipe because we will be eating the skins and that is where you will find a lot of the nutrients in sweet potatoes), pierce them 6-8 time with a knife (we don’t want them to explode) and wrap them in a damp paper towel. Place in the microwave for about 2 minutes per sweet potato, rotating them once. Please note that microwave times will vary based on your microwave and the size of the sweet potatoes.
While the sweet potatoes are cooking, heat olive oil in a large, deep pan. Once hot, add the garlic to the pan and just brown the garlic. Add all of your baby spinach and kale and wilt for 2-3 minutes. You will be amazed by how much it cooks down (I promise 😉 )
When the sweet potatoes are fork-tender, remove them from the microwave and cut in half to cool. Once cool enough to handle, scoop out the sweet potato flesh leaving a thin layer inside the skin so they will hold their shape.
Then place the skins on a baking sheet and drizzle with olive oil. Bake them for 5 minutes to get the skins crispy. Remove from oven.
While the skins are crisping, mash the sweet potato flesh with greek yogurt and Kraft Philadelphia Cream Cheese.
Add the sauteéd greens, chickpeas, salt, pepper and chipotlé chili powder to the bowl and stir to combine well. Fill each skin with the sweet potato mixture and top with lots of Kraft Natural Cheddar Cheese. Bake again for 10 minutes or so to melt the cheese and warm the filling. Turn the broiler on and broil for 1-2 minutes more. Watch this process very closely as they will burn quickly.

- 6 medium sweet potatoes

- Bake again for 10 minutes or so to melt the cheese and warm the filling.
- Turn the broiler on and broil for 1-2 minutes more. Watch this process very closely as they will burn quickly.
- Remove from oven and serve immediately.
I ended up with extra sweet potato mixture that did not fit into the skins. It can be warmed and served with pita chips or crackers as an additional dip for the gathering.

For New Year’s Eve, we just head out to a neighborhood party which is perfect for us since I can walk home with whichever child hits their wall (which is way before midnight) while my husband stays with the other two!
